Pumpkin Bars


  • 2 C. sifted flour
  • 2 tsp. Baking Powder
  • 2 tsp. Cinnamon
  • 1 tsp. Baking Soda
  • 4 Eggs
  • 2 C. canned Pumpkin
  • 1 2/3 C. Sugar
  • 1 C. vegetable Oil
  • 1 C. chopped Pecans

    1. Mix together the oil, sugar and eggs.
    2. Mix in the pumpkin
    3. Sift together all the dry ingredients.
    4. Mix part of the dry ingredients into the oil mixture,
      then add the remaining flour mixture and stir just till moistened.
    5. Spread in a 15" x 10" x 1" pan.
    6. Bake at 350 for 25-30 minutes.

        Cream Cheese Frosting

      1. 3 oz. Cream Cheese
      2. 1/4 C. butter
      3. 2 C. sifted Powdered Sugar

        Beat all ingredients together until smooth.
        Frost the baked and cooled pumpkin mixture. Cut into bars.
